——模块化咖啡吧台的一次设计实践
对于当代人来说,咖啡出现在生活中的频次日益增多。几年间,咖啡便从小众饮品转变为大众日常功能性及社交属性的饮料,各式各样的咖啡馆争先恐后地出现在大众身边。咖啡馆的经营模式也逐渐分化为侧重于追求咖啡贩售数量及坪效比的“档口店”,与侧重于整体空间体验,供人们停留社交的“空间店”。

Uncle(以下简称DU)是一个有着明确定位与风格且在北京拥有了数家特色“空间店”的咖我们参与的设计是DU啡品牌。本次与宝马的一次跨界合作,在北京宝信行4S店内新开的一家“档口店”。同时这家店也是DU第一次应用机械臂协同咖啡师共同工作,进一步提升出品效率的试点店面。这家店有可能会作为DU档口店的设计模板,为后续大量铺开的店面提供方法论。
结合这些情况与我们的相关设计经验,模块化的设计概念第一时间被确定了下来,最终发展成为一套灵活的吧台模块系统。在构造层面,构成吧台的每一个模块都是由支撑腿、台面、挡板、柜体及相关配件这几个标准化部件在工厂加工、现场组装而成的;在功能层面,通过不同的搭配,我们分别设计了咖啡制作模块、洗消模块、蛋糕柜模块、冰箱模块、出餐及储物模块、转角模块等常规模块,也专门为本次方案中特有的机械臂设备定制了特殊模块。这些模块可以按需求任意连接,组成适应不同需求的吧台整体。
本案中,为映衬机械臂这一科技形象,我们运用微微发青灰色的荔枝面花岗岩作为吧台的主体材料,将具有粗粝质感的自然材料、冷峻科技感的机械臂以及人类咖啡师放在一起形成某种元素上的平衡。橙绿相间的格栅状挡板第一时间亮明了DU品牌身份,也同时暗暗致敬了宝马标志性的进气格栅。包裹空间的墨绿色镜面不锈钢、必要位置的绿色玻璃挡水隔板、绿色LOGO灯箱不仅烘托出科技属性,也进一步增加了品牌主题色的露出。同时得益于模块化的构造,材料的运用也可根据不同店面的情况及品牌调性进行调整搭配。
我们相信,模块化的吧台系统可以很好地适应日益加速的咖啡开店热潮:在设计层面,运用不同材料和形式的构件以满足不同品牌的调性需求,现成的咖啡吧台产品可帮助新店主降低设计门槛;在施工层面,由工厂统一加工、现场组装的形式提高了加工精度和统一性,也极大缩短了现场施工时间;在空间应用层面,不同模块可像积木一样根据场地组合成各种形状,以满足不同空间的各种吧台形态;在经济层面,模块化的吧台可拆除回收,在别处重复使用,这样间接节省了物料,且有利于二次资源的循环,减少废弃物的产生。
模块化概念在建筑上的运用已经屡见不鲜了,结合一些咖啡店设计经验,我们发现咖啡吧台的设计是非常功能化但又灵活多变的,而这些特性都是模块化所具备的优势。作为设计师,我们希望避免重复设计,也期待这一模块化的吧台系统可以有更多的运用场景,为咖啡从业者带来便利。

A design practice of
modular coffee bar counter
For contemporary people, coffee appears more and more
frequently in life. In a few years, coffee has transformed from a niche drink
to a daily functional and social drink for the public, and various cafes are
vying to appear around the public. The business model of coffee shops has also
gradually differentiated into "stall shops" that focus on the pursuit
of coffee sales quantity and square footage ratio, and "space shops"
that focus on the overall space experience for people to stay and socialize.
Double Uncle (hereinafter referred to as DU) is a coffee
brand with a clear positioning and style and has several unique "space
stores" in Beijing. The design we participated in is the DU coffee brand.
This is a cross-border cooperation with BMW, a newly opened "stall
store" in the Beijing BaoXinHang 4S store. At the same time, this store is
also the first pilot store where DU uses robotic arms to work together with
baristas to further improve production efficiency. This store may be used as a
design template for DU stall stores and provide a methodology for subsequent
large-scale store expansion.
Combining these circumstances with our relevant design
experience, the modular design concept was determined immediately and
eventually developed into a flexible bar module system. At the structural
level, each module that makes up the bar is made of standardized components
such as support legs, countertops, baffles, cabinets and related accessories,
which are processed in the factory and assembled on site; at the functional
level, through different combinations, We designed conventional modules such as
coffee making module, decontamination module, cake cabinet module, refrigerator
module, dining and storage module, corner module, etc. We also customized
special modules for the unique robotic arm equipment in this solution. These modules
can be connected as needed to form a complete bar that adapts to different
needs.
In
this case, in order to set off the technological image of the robotic arm, we
used slightly bluish-gray lychee granite as the main material of the bar. We
put together the rough natural materials, the cold technological robotic arm
and the human barista. Create a certain balance of elements. The orange-green
grille-like baffle immediately highlights the DU brand identity, and also
secretly pays tribute to BMW's iconic air intake grille. The dark green mirror
stainless steel wrapping the space, the green glass water-blocking partitions
at necessary locations, and the green LOGO light box not only highlight the
technological attributes, but also further increase the exposure of the brand
theme color. At the same time, thanks to the modular structure, the use of
materials can also be adjusted and matched according to the conditions of
different stores and brand tones.
We
believe that the modular bar system can well adapt to the increasingly
accelerating coffee shop opening craze: at the design level, different
materials and forms of components are used to meet the tonal needs of different
brands. Ready-made coffee bar products can help new shop owners reduce costs.
Design threshold; at the construction level, the unified processing by the
factory and on-site assembly improves the processing accuracy and uniformity,
and also greatly shortens the on-site construction time; at the spatial
application level, different modules can be combined into various types
according to the site like building blocks. The shape can meet various bar
forms in different spaces; at the economic level, the modular bar can be
dismantled, recycled, and reused elsewhere, which indirectly saves materials,
is conducive to the recycling of secondary resources, and reduces the
generation of waste.
The application of modular concept in architecture is not
uncommon. Combining some coffee shop design experience, we found that the
design of coffee bar is very functional but flexible, and these characteristics
are the advantages of modularity. As designers, we hope to avoid repeated
designs, and we also hope that this modular bar system can be used in more
scenarios to bring convenience to coffee practitioners.
